I’ve been struggling to find easy lunches for my kids for school. There are so many different allergies nowadays, it puts a huge strain on the types of food you can send your kids to school with. Almond butter & jelly sandwiches are only going to last for so long. When your kids come home with a full lunchbox, that should be a red flag. So, what do you do!? Turn to Pinterest!
I came across this mini deep-dish pizza recipe on Pinterest and I knew instantly it would be a hit. All of my kids love pizza, I knew they wouldn’t pass up this lunch option. It’s so easy to make, which makes it even better! My husband loves making homemade pizza dough but with the way my time is set up, I settled for crescent roll dough. Needless to say, they taste amazing!
The full printable recipe is at the bottom of this post, but here’s what you’ll need to snag from the grocery store:
- One container of refrigerated crescent roll dough
- One small can of pizza sauce
- Mozzarella Cheese
- Mini Pepperoni slices (I chose to use whole pepperoni slices)
Open the crescent roll dough and lay it out flat on a cookie sheet. To achieve mini pizzas use a plastic cup, small can or mason jar lid to cut out 12 little circles. If you want your mini pizzas to be more like mini pizza muffins, cut the dough into 12 squares (or rectangles).
Spray the muffin tin with cooking spray and put the dough in the bottom of each cup.
Add a layer of mozzarella cheese on top of the dough.
Next, spoon some pizza sauce on top and spread it over the cheese. Then add another layer cheese.
And finally, add your toppings! I added 1 pepperoni slice to each mini pizza. Just remember, if you add more toppings, you might need to add a couple minutes to the cooking time.
Bake the mini pizzas for 15 minutes until the cheese bubbles and the crust becomes golden brown.
This was seriously the easiest lunch to prepare! I prepped my ingredients prior to waking my kids up for school and popped them into the oven. By the time I brushed their teeth and washed their faces … viola, their lunch was complete!
… Until next time!

Recipe Notes
After adding the dough to the pan, add a layer of mozzarella cheese on top of the dough. This helps keep the dough from getting soggy. Remember, if you add more toppings, you might need to add a couple minutes to the cooking time.
