Summer is upon us and everyone loves to gulp down something cold & refreshing. I took my little ones blueberry picking a few years back. As blueberries are a hot commodity in our household. They loved every second of it. Jeremiah, my sensory seeking kid, enjoyed exploring the different textures of the blueberry trees. He may have eaten more blueberries than we could count. We probably should’ve sat him on the scale at checkout!
My family enjoys making fresh juices at home. During the summer, I love making a variety of fresh lemonades. To kick of this summer’s drink recipe list, I wanted to pull this “lip smacking” blueberry lemonade recipe out of my vault of recipes. It only consists of 5 simple ingredients!
Ingredients
- 2 cups fresh blueberries
- 3/4 cup granulated sugar
- 2/3 cup lemon juice (freshly squeezed)
- 5 cups cold water
- Lemon slices (optional)
- Mint leaves (optional)
Instructions
- Make the blueberry syrup: Combine the sugar and 1 cup water in a medium saucepan. Bring to medium heat, stir until the sugar has dissolved.
- Add the blueberries and bring to a boil over high heat; Once the mixture begins to boil, reduce heat and simmer until blueberries have broken down (about 3-4 minutes).
- Allow the blueberry mixture to cool. Puree the mixture in a blender or food processor.
- Strain blueberry mixture through a fine sieve (or cheesecloth).
- In a large pitcher, whisk together the blueberry syrup, lemon juice and 5 cups water. Place in the refrigerator until chilled.
- Serve over ice and blueberries, if desired. Add mint leaves for garnish.
